All the veggies are from McClendon's Select farm," states Swann. "Ninety percent of the proteins and meats are from Schreiner Farms, here locally. All of the dairy is sourced locally and even the iced tea is sourced locally from Passport Coffee and Tea. All of the beer is sourced local, too-all 35 handles and all the art on our walls is from Scottsdale artists." Even the white oak that makes up the main community bar table was sourced from Arizona. Executive Chef Horacio "Lacho" Hernandez was previously at the famed Pizzeria Bianco in Phoenix for 17 years and he is now wowing customers with his brick oven-fired pizzas at Craft 64. "The man has magic hands and really, really knows how to make a pie," says Owner and Operator of Craft 64, James Swann. The Fico pizza is the most popular and features fresh mozzarella cheese, buratta, parmigiano reggiano, truffle oil arugula and fig sauce. With just a kick of spice, the Spain is also another popular pizza boasting fresh mozzarella, parmigiano reggiano, La Mancha chorizo, Spanish almonds, cured olives and mild harrissa sauce. All pizzas are fired in the brick oven that was brought over from Italy. The local and fresh organic produce and house made sauces really makes a difference in the flavors of the artisan pizzas. Salads at Craft 64 are absolutely stellar because of the fresh, quality organic ingredients. The Kale Pear salad features rainbow kale, shaved parmigiano reggiano, butter lettuce, pumpkin seeds and Craisins drizzled with a light but creamy pumpkin dressing. The Panzanella salad is a stand-out, too, with cucumber, heirloom tomatoes, yellow and red onion, fennel, croutons and a light red wine EVO dressing. Be sure to save room for Craft 64's hand-crafted desserts. "Thirty-five beers on tap, plus a cider-the 35 beers on tap are all sourced locally here in Arizona. These are all Arizona breweries. Almost everything is the kitchen is all sourced local. We don't own a fryer, microwave or freezer. If it can't be made fresh on a plate or come out of that pizza oven, we don't do it. Beyond that, everything we make is from scratch including our dressings and sauces. We even pull our own mozzarella."
